Matcha Mochi Cake Recipe

Matcha Mochi CakeTo the Mochi Cake Recipe that Mai sent me, I added matcha (green tea powder). It made for a very tasty cake with a deep green center that everyone loved!

I used pretty normal matcha from Ten Ren. This is pretty cheap for that quantity of matcha, which can get very expensive very quickly, depending on the quality.

Mochiko is glutinous rice flour, or sweet rice flour. You can find it at many Asian grocery stores, usually in 1lb packages (boxes or bags).




(Matcha) Mochi Cake Recipe

Ingredients: 
1 box Mochi Ko powder (=1 lb)
1 can coconut milk (Chao Koh brand)
1/2 cup butter
1 tsp baking powder
2 tsp vanilla extract (plus a little extra dash if making matcha flavor)
4 eggs
2-1/2 cups sugar
If making matcha flavor: 3 heaping spoonfuls of matcha 


Instructions
  1. Preheat oven to 350 degrees
  2. If making matcha flavor: sift the matcha with the mochiko until evenly mixed
  3. Cream eggs, butter and sugar with mixer on medium
  4. Add Mochi powder (with matcha mixed in already), baking powder, coconut milk, vanilla extract.
  5. Mix all until well blended
  6. Grease and flour 9x13 inch pan and pour mixture into pan
  7. Bake at 350 F for 1 hour (or ~45 min, depending on your oven, type of pan, and thickness of cake)
  8. Cut into pieces and serve
Try not to eat too many pieces at once...mochiko isn't exactly the best for digestion. :)
